As part of my goal to become a healthier, more wholly nourished person, I would really like to start focusing on plant-based foods as the basis for my meals. Fruits, vegetables and legumes offer a wide array of vitamins, minerals, and proven health benefits, their cultivation and production is kinder to our environment, and it's often possible to get a variety of flavors and textures without packing on calories. Here is a round-up of a few delish-looking veggie recipes that I'd like to try out in 2014:
Ratatouille: I have my own favorite recipe, and it's so delicious, colorful and comforting on a cold winter's night.
Sesame-Crusted Marinated Tofu: I found this on A Beautiful Mess, and am dying to try (I am an absolute tofu freak... I could seriously eat it at every meal)
Parmesan Zucchini: mmmmm. I love zucchini and am always looking for new ways to cook it (other than my old stand-bys, stir fry and roasting)
Curried squash: I fell in love with Indian food just this past year, but it was a hard fall... I love the aromatic, earthy smells and intense heat of curry, and this seems like such an interesting, attractive dish.
Spaghetti Squash Gremolata: not gonna lie, cooking spaghetti squash is not as easy (or quick) as it's cracked up to be... but when I can force myself to be patient and get it right, it's just beyond. This is a gorgeous, hearty way of preparing it.
